Bodega Olivina
Winemaker – Jorge Rodríguez
Production – 10,000 Litres
Bodega Olivina is the latest creation of Jorge Rodríguez, a renowned local winemaker and while one of the young guns of Lanzarote wine, he is also the current president of the Denomination of Origin Lanzarote. Jorge is an agricultural engineer and winemaker, with past experience at El Grifo followed by another family project before producing the first Olivina vintage in 2024.
The winery and many of the vineyards are located in the northern part of the island, beneath the majestic Corona volcano (Volcan de la Corona). This vibrant volcanic terrain, shaped by past eruptions 21,000 years ago fit well with the bodega's philosophy: to honour nature and work in harmony with it.
Colour
A medium ruby red colour which reveals a wine of both intensity and youth. Its brightness in the glass reflects the freshness of the wine, promising a balanced and attractive experience on the palate.
Aroma
Respiro displays a medium aromatic intensity that highlights the fresh and vibrant aromas of Listán Negro. Predominant notes of red fruits such as cherries and raspberries are prominent,
which define the fruity character of the wine. These aromas are accompanied by subtle spicy nuances and a slight touch of fresh herbs, which provide an additional layer of complexity.
Mouth
Respiro Tinto presents a smooth and enveloping wine, which opens the palate in an elegant way. Its medium body provides a balanced structure.
The acidity too is well balanced, providing freshness and vivacity to the wine. The flavors in the mouth are dominated by fresh red fruits, with a fruity and expressive profile reminiscent of cherries and raspberries. The finish is persistent and elegant.
