Bodega Olivina
Winemaker – Jorge Rodríguez
Production – 10,000 Litres
Bodega Olivina is the latest creation of Jorge Rodríguez, a renowned local winemaker and while one of the young guns of Lanzarote wine, he is also the current president of the Denomination of Origin Lanzarote. Jorge is an agricultural engineer and winemaker, with past experience at El Grifo followed by another family project before producing the first Olivina vintage in 2024.
The winery and many of the vineyards are located in the northern part of the island, beneath the majestic Corona volcano (Volcan de la Corona). This vibrant volcanic terrain, shaped by past eruptions 21,000 years ago fit well with the bodega's philosophy: to honour nature and work in harmony with it.
Colour
Visually, Respiro Rosado is a blush, almost translucent pink colour. It shines in the glass with a remarkable brightness, reflecting its youth and freshness.
Aroma
On the nose, Respiro Rosado displays a medium aromatic intensity which captivates from the first moment. The predominant aromas are of fresh red fruits, such as strawberries and raspberries, accompanied by candied notes that evoke a playful and attractive character. These aromas are complemented by subtle floral notes, which add complexity and depth to the olfactory profile.
Mouth
On the palate, Respiro Rosado is fresh and unctuous, which awakens the senses. Its body is delicate, with a soft and pleasant texture that makes it easy to drink. The well-balanced acidity enhances the freshness and fruity flavors, where notes of red fruits and sweet touches reminiscent of candy stand out. It will evolve favorably over the next 2 years.
