A dry, crisp blush rosé produced from 100% Listán Negro grapes on pre-phylloxera vines, aged between 45-60 years old grown under a layer of volcanic ash. The hand harvested grapes are carefully transported to the winery in small baskets to prevent damage and unwanted maceration. The grapes are then loaded into the press and the free-run juice with minimal skin contact is collected and then fermented at 17°C. After fermentation the wine is quickly racked and left on its fine lees for less than a month to highlight its freshness. It is then clarified and filtered.

Winemaker – Jorge Rodriguez
El Grifo was founded in 1775, making it the oldest winery in the Canary Islands and one of the 10 oldest in the whole of Spain. El Grifo has been owned by the same family for 5 generation and over the years it has been the major innovator on Lanzarote. It regularly brought over modern-day equipment from the continent and in the early 1980’s it was the first to bring in stainless-steel vats, which has gone on to revolutionise modern day winemaking. Always pushing the boundaries, with the 2019 vintage they began to use only cultivated yeasts from their own vineyard, bringing an extra authentic touch to their wines.
