The vinification process used for this wine replicates methods from 8,000 years ago in the Caucasus. Grapes from century-old vines are fermented with their skins for three months, allowing for a rich infusion. As a traditional wine, it`s made without the addition of sulphites, thanks to the protective qualities of the polyphenols found in the skins. Additionally, it has not been filtered or stabilised, which may result in the presence of lees. The oxidative effects of the polyphenols contribute to the orange hues of this unique and distinctive wine.

Winemaker – Elisa Ludeña
El Grifo was founded in 1775, making it the oldest winery in the Canary Islands and one of the 10 oldest in the whole of Spain. El Grifo has been owned by the same family for 5 generation and over the years it has been the major innovator on Lanzarote. It regularly brought over modern-day equipment from the continent and in the early 1980’s it was the first to bring in stainless-steel vats, which has gone on to revolutionise modern day winemaking. Always pushing the boundaries, with the 2019 vintage they began to use only cultivated yeasts from their own vineyard, bringing an extra authentic touch to their wines.
Colour
Light amber colour.
Aroma
Intense and complex. Floral aromas of orange blossom and rose, ripe stone fruit like peach and apricot, and candied orange peel. Oxidative notes reminiscent of dried fruits.
Mouth
Despite the marked oxidative part resulting in a slight astringency on the finish, the wine is very saline and mineral, marking the volcanic character of the island.
