This white wine is meant for bottle ageing and represents the evolution of the Seco Collección. After fermentation, 30% of the batch was placed in 500-liter French oak barrels, while the remaining portion was kept in stainless steel tanks. The lees were kept in suspension for 7 months with manual batonnage. Finally, a blend of both ageing processes was created, and then the wine was aged in the bottle for a further 8 to 12 months before being released onto the market. The result? A white wine with the soul of a red.

Winemaker – Elisa Ludeña
El Grifo was founded in 1775, making it the oldest winery in the Canary Islands and one of the 10 oldest in the whole of Spain. El Grifo has been owned by the same family for 5 generation and over the years it has been the major innovator on Lanzarote. It regularly brought over modern-day equipment from the continent and in the early 1980’s it was the first to bring in stainless-steel vats, which has gone on to revolutionise modern day winemaking. Always pushing the boundaries, with the 2019 vintage they began to use only cultivated yeasts from their own vineyard, bringing an extra authentic touch to their wines.
Colour
A bright yellow colour with golden hues.
Aroma
Intense aromas of tropical fruit such as mango and pineapple and a touch of lemon, intertwined with delicate notes of orange blossom and jasmine. The lees ageing and bottle maturation provide complexity, adding aromas of bread, biscuits, and dried fruit.
Mouth
Smooth and refreshing, with a subtle hint of fennel complementing its citrus and mineral flavours. Long and persistent.
Food Pairing
The perfect match with fish, of course, but also white meats, cheese, and risotto.
