The grapes are gently pressed without destemming, preserving their full character and natural expression. After a 24-hour static settling, fermentation begins using their own indigenous yeasts.
Once fermentation is complete, 30% of the wine is transferred to 500-liter French oak barrels, while the remaining portion is kept in the tank. Over the next 7 months, the wine is aged on its lees, with regular stirring to enhance texture and complexity. In the barrel, bâtonnage is performed manually.
Finally, the two components are carefully blended, creating a balanced and harmonious wine. After bottling, the wine continues to age for an additional 8 to 12 months before release.

El Grifo was founded in 1775, making it the oldest winery in the Canary Islands and one of the 10 oldest in the whole of Spain. El Grifo has been owned by the same family for 5 generation and over the years it has been the major innovator on Lanzarote. It regularly brought over modern-day equipment from the continent and in the early 1980’s it was the first to bring in stainless-steel vats, which has gone on to revolutionise modern day winemaking. Always pushing the boundaries, with the 2019 vintage they began to use only cultivated yeasts from their own vineyard, bringing an extra authentic touch to their wines.

On the nose is complex, with aromas of fennel, hay, and white fruit and subtle toast, vanilla, and bakery notes from ageing on the lees.
Mouth
On the palate is fresh and vibrant, marked by high acidity. The lees-ageing adds a creamy texture. The oak provides structure and flavours of spice, vanilla, and toasted almond. Long, mineral, and balanced finish.
