Las Cadenas is one of the newest wineries on the island, but with one of the most high profile wine makers at the helm. It comprises several plots distributed across the municipality of Tinajo said to produce the highest quality of Malvasía Volcánica on the island. The grapes are harvested at the optimal moment and with a high level of ripeness.
The grapes are pressed with the stems present, and the must is allowed to settle naturally for 24 hours. After alcoholic fermentation, carried out with indigenous yeast, the wine remains on its lees for 6 months before being bottled.

Winemaker – Tomás Mesa
Francisco Rivera spent many years successfully running a construction business before retiring and returning to his family’s winemaking roots.
From the age of seven, he joined his grandfather during the annual vendimia (grape harvest), learning traditional methods that have stayed with him throughout his life. Wine has always been created for family and friends, long before it became a professional endeavour.
Located in the Yuco area of La Vegueta, Francisco's journey into commercial winemaking began during the COVID years when he purchased a 20,000 m² vineyard behind Las Cadenas Restaurant, another business he owns. He fully restored the vineyard and planted new Malvasía vines, which are now five years old. Additionally, he owns several other vineyard plots in the area, with vines ranging from 5 to 30 years old, and he also sources selected grapes from local growers.
Today, Francisco oversees the vineyards and farming operations, working closely with renowned winemaker Tomás Mesa from Tenerife, who has previously worked at El Grifo, Vega de Yuco, and Guiguan. Tomás leads the winemaking process. Currently, production stands at approximately 5,000 bottles for the 2024 vintage, with plans to steadily expand production and cultivate a diverse international customer base.

On the nose is intense with notes of citrus (lemon peel, grapefruit), white flowers.
Mouth
On the palate, it shows excellent structure, richness, and a long finish, provided by the lees ageing, balanced by vibrant acidity that will allow it to age beautifully in the bottle for at least the next 2–3 years.
