The grapes are carefully crushed and pressed, including the stems, allowing the must to settle naturally for 24 hours before fermentation. The wine ferments with native yeasts at moderate temperatures ranging from 16 to 18ºC, which helps to preserve the vibrant and delicate aromas of the Listán Blanco. After fermentation, the wine ages for six months in old, 500-liter demi-muids, during which it spends time on its lees to develop texture and depth.
